'Drinks & Desserts' cocktail tasting flights:

  • Spiced Grapefruit Spritz: Our Firetree Liqueur with Bitter grapefruit, cardamom, early grey, and topped with Prosecco. Paired with a Lemon coconut button.
  • Yuletide 'Negroni': Our Madame Marmalade with Italicus, sweet vermouth and sherry. Paired with Rich Choc Brownie.
  • Brandy 'Eggnog' Flip: Our Spiced Christmas Brandy with Horchata, mocha, cream and egg.  Paired with a mini Christmas Pudding.

Spiced Hot Chocolate

As part of our Christmas in July celebrations this year on Sat/Sun 20th & 21st July at our Distillery Door, we'll be serving up steaming hot chocolate infused with our Firetree liqueur - a luxurious mix of warm chocolate and spiced cinnamon.

This spiced liqueur is a decadent and luscious palate of warm spiced heat, balanced with a lingering sweetness. A premium blend of all natural spices that leads with Australian native cinnamon myrtle combined to create a complex heat explosion. Serve neat when the sun goes down and hold on for the ride.

Limited release
Winter Gin

It's been 5 years since our last vintage and we're excited to release our exclusive, limited edition, Winter Gin. A bold, unique combination of two finely distilled spirits; a lashing of apple brandy blended with a gin inspired by wintry seasonal fruits and warming spices best enjoyed on a cold winter's day. 

A limited number of bottles are available online and via our Distillery Door until sold out.

Montalto Bass Flinders Distillery collaboration GIN BATCH THREE

For the last two years, we’ve collaborated with one of our local heroes here on the Peninsula - Montalto - to create their extremely popular Limited Edition gin. After selling out Batch One and Two, we’re thrilled to let you know the latest release - 'Batch Three' is available now.

This gin has been handcrafted using Bass & Flinders’ Methode Eau de Vie – the art of distilling wine into spirit – delivering a smoother, fuller, richer flavour.

We recommend Montalto Gin Batch Three in a simple, refreshing gin and tonic so you can really taste the distinctive flavours of the Montalto estate.

So proud of our Managing Director and Head Distiller Holly, who spent 6 weeks in Cognac, France on an internship building on her vast knowledge of brandy production from the some of the great distillers in the world. An incredible experience working with cognac producers large and small, and importantly all the incredible knowledge – much of which spans generations - that has been imparted in her quest to reignite Australia’s love affair with brandy.

Inspired by traditional French distillation methods and the surrounding Mornington Peninsula hinterland – the design brings to life our innovative spirit and passion for creating artisan spirits.

Today the Australian Distillers Association elected its first female President, our Managing Director and Head Distiller Holly Klintworth!

Holly takes on the role as ADA President following 8 years with Stu Gregor, Four Pillars Co-Founder at the helm.

The team here at Bass & Flinders are so proud of Holly's achievement which is recognition of all her passion and hard work in the distilling industry.

Bass & Flinders Distillery Mornington Peninsula Gin Masterclass experience



We offer one of the most unique Gin Masterclasses in Australia where you have an opportunity to create your very own bespoke gin.

Our resident Gin Expert will walk you through the perilous yet fascinating history of gin, the gin distillation process along with the tricks and techniques required to create the perfect gin recipe. Also included in the experience is a cheese platter and G&T, and following the class each guest leaves with a 500ml bottle of their own signature gin blend.
