We are extremely proud of our unique approach to producing quality Australian spirits. We choose to make our own grape based eau de vie spirit which forms the basis for our entire product range. Producing our own base spirit on-site allows us to control the entire production process from vine to bottle.
We believe quality starts with the grape, and are also proudly sourcing all our wine from Victoria. The resulting eau de vie spirit showcases the rich, ripe aromas expressive of the terroir from which the wine was sourced, and adds flavour and viscosity to our entirely grape-based product range.
Our botanicals are the very element that keeps our gin range fascinating! We are forever scouring Australia and world for the most unique flavours. We have, in recent times, sourced some rather unusual native botanicals from central Western Australia including native lemongrass and flowers for our gins.
We also ensure that our hand crafted grape base eau de vie spirit expresses the local grapes, adding an extra flavour dimension to our gin range.
Our distillery is making over 3000 unique gins each year with the help of our gin enthusiasts at our Gin Masterclasses and we are continually working with multiple bars to create tailored gins. In doing so, we have given ourselves a unique vantage point to see the trends in the industry which are reflected in our range of seasonal gins.
Our Gin Masterclasses, therefore, keep us continually developing our range of botanicals in order to create the most unique gins on offer in Australia.
Our ever growing botanical range consists of flowers, seeds, roots, spices and aromatic fruits. Some of our favourite botanicals include juniper, coriander, cassia bark, Mulla Mulla, Purple Vetch, cardamom, Angelica root, lemon, lime, pepper berry, ginger, orange & native (Australian) lemongrass.
