This extremely limited edition gin harnesses the briny minerality of Pacific Oyster shells and brings to life the unique spirit, natural environment and rugged beauty of our favourite place in the world - our home.
Our Limited Release Oyster Shell Gin is a bright, savoury gin with a creamy umami twist. Juniper aromas breezily entwine with dill, saltbush and a squeeze of lemon creating a fresh Springtime, seaside spirit. The minerality of the oyster shells, coriander, calamus root, sesame seeds and the subtle, spicy texture of Sichuan pepper create a rounded, seamless mouthfeel and soft palate.
Our Head Distiller Holly first toyed with the idea of distilling oyster shells back in 2019 when a Japanese distillery she admires, Sakurao Distillery, first released their gin made with local Hiroshima botanicals - including oyster shells.
We're always passionate about using local, native botanicals with a focus on regional sustainability, so Holly spoke with our friends down the road at Peninsula Fresh Seafood about sourcing their left-over Pacific Oyster Shells, and went foraging for the native saltbush that grows all along our beautiful coastline - which repurposes an abundant by-product and also creates a premium, local-inspired gin reflective of our home here on the Mornington Peninsula.
